The design began as a response to the client’s wish to serve fresh food in the open—where the making could be seen, not packaged or hidden behind a small window. The enclosure unfolds to reveal its process: a side wall pivots outward to form a shaded canopy, turning the point of sale into an exterior room. A translucent roof equalizes light between inside and out, blending kitchen and street. The counter becomes a shared surface for serving, customizing, and conversation—an architecture of openness aligned with the idea of fresh food itself.
